Graham Cake

We basically brought 1 cookbook along with us to save on space and extra baggage. I really like to try new recipes and I haven't used this book a whole lot, so...enter Healthy Choices-no sugar-no white flour- no artificial anything. Published by Carlisle Press, I ordered mine from a magazine titled Keepers At Home.

Shannon really likes pancakes. Our whole family really likes pancakes. Our family eats a whole lot of pancakes. Our electric griddle is in tow, however doesn't work real well when we don't have power, which happens to be all the time since Shannon installed handy solar panels. (Neither does the crockpot that we are also hauling around. More dead weight!) As an alternative I flipped to the cake section of Healthy Choices and started trying new recipes for a breakfast cake in place of pancakes. Here is a check-plus recipe for us because it is basic, filling, easy, nutritious, frugal, and quick (if you have time for it to bake).



GRAHAM CAKE
1/2 c. honey
3 c. whole wheat flour
1 tsp. baking soda
1/2 tsp. salt
2 c. milk
1/2 c. butter or coconut oil

Mix. Pour in 9x13 dish and bake 400* for 20 minutes.
Serve warm with milk and/or fruit.

*For a dessert cake, double the honey and butter.*
